To prepare Israeli or pearl couscous, you'll need about 1 1/4 cups of water or vegetable stock to 1 cup of cous cous. Bring to boil then simmer on low heat for about minutes. Fluff up with a fork. They have an "al dente" feel when cooked. Eaten hot or cold. Great base for a salad.
